8-10 Large Yellow Squash
1 medium-sized onion
8-10 ounces of cheddar cheese
2 large eggs
1/4 cup milk
2 large sleeves of Ritz Crackers
Salt and pepper to taste

Directions

Preheat oven to 425 degrees.

Boil squash and onion in a large pot of water, then add salt and pepper to taste.

Cook until tender but not mushy.

Drain well, and place in a large bowl.

Mix the Ritz crackers (crumbled) and cheese.

Stir half of the cracker mixture into the cooked squash and onions.

In a small bowl, mix together eggs and milk, then add to squash mixture.

Spread into a 9 x 13 inch stoneware or corningware dish.

Sprinkle with remaining cracker mixture.

Bake in preheated oven for 30-45 minutes, or until lightly browned. I typically cover with foil until it's time for the squash to brown on top.
